The buzz around Hobart's newest hotspot, Don Frico, is palpable. This New York-inspired pizza joint and cocktail bar has created quite a stir, with its opening weekend seeing queues stretching for a staggering seven hours. It's an intriguing phenomenon, and one that begs the question: what makes a venue so instantly popular?
The Recipe for Success
Don Frico is the brainchild of five friends who identified a unique niche in Hobart's nightlife scene. Co-owner Ben Wells and his team have crafted an experience that appeals to a specific demographic: those seeking a relaxed, music-filled environment with quality drinks and, of course, delicious pizza.
The venue's capacity is relatively small, seating only 62, with an additional 20 during late-night hours. Yet, this intimate setting seems to be a key part of its charm. Wells describes the opening day as "amazing", with the venue full from 4 pm onwards and a constant queue of eager patrons.
A Deliberate Approach
What's particularly interesting is the owners' deliberate strategy. They initially ran the space as Society Salamanca for a few months, observing and understanding the dynamics of the venue and its patrons. This observational period allowed them to identify the gaps in the market and tailor their concept accordingly.
"We wanted to spend time in the space and really understand what it needed," Wells explains. This thoughtful approach is a refreshing change from the typical "open and see" strategy many venues employ.
Filling a Gap
Don Frico aims to fill two distinct gaps in Hobart's bar scene. Firstly, it offers New York-style pizza by the slice, a concept that's relatively new to the city. Secondly, it provides a late-night option for those seeking a more relaxed, mature atmosphere.
The response from customers has been overwhelmingly positive. Wells shares that the feedback has been along the lines of "We've been waiting for a venue like this." It's a testament to the team's ability to identify and cater to an unmet need in the market.
A Playful Name, a Unique Concept
The name Don Frico is an intriguing choice, derived from Detroit kitchen slang for the cheese skirt on a Detroit-style pizza. Adding "Don" to avoid confusion with an existing restaurant, the name translates to "boss cheese", a playful and memorable moniker.
The venue's concept is equally unique, with vinyl DJs spinning tunes on weekends, curated by the crew from Tickle. This adds to the overall atmosphere, creating a vibrant and nostalgic vibe.
A Bright Future
With bookings already filling up fast, Don Frico's future looks promising. The team's attention to detail, from their thoughtful rebranding strategy to their focus on creating a specific atmosphere, has paid off.
In my opinion, Don Frico's success is a reminder that sometimes the most successful ventures are those that fill a genuine need or desire. It's a fascinating case study in understanding your market and creating an experience that resonates.
What many people don't realize is that it's often the little details, like the name or the music, that can make a venue truly stand out and create a lasting impression. Don Frico has certainly done that, and I, for one, am intrigued to see where this journey takes them.
